Food Network veteran Kevin Des Chenes, aka Chef Kev D, the Newport-based culinary director for the Mansions Food & Wine Festival who has cooked for celebrities like Tommy Lee Jones, Garth Brooks and Trisha Yearwood shares his recipe for Simple Gravy:
1 lb. salted butter
1 ½ cups all-purpose flour
Juices/drippings from cooked turkey, some fat drained off, or turkey or chicken stock Salt and pepper to taste
In a medium saucepan, melt butter, then whisk in the flour to form a roux, switching to a wooden spoon and cooking briefly after it’s come together to lose the raw flour taste.
On low heat, whisk in the natural jus from cooked turkey or warm stock to desired thickness. Add salt and pepper to taste.
