Montmorency Cherry Conserve

Making sauce is quite simple and is lovely spooned over vanilla ice cream. A bit of brandy or red wine added to the conserved cherries makes Sauce Montmorency, a delicious complement to duck, chicken, beef and venison.

You will need:

4 lbs. of sour cherries
2 packets of Certo liquid pectin
5 cups of sugar

Follow all directions exactly from the "Ball Blue Book Guide to Preserving." Jars are available at Ace Hardware in Newport. This recipe calls for a canning bath process, so have a canner on hand. What you will really need is a cherry pitter. You can find one at Bed, Bath and Beyond in Middletown; they are currently carrying a large variety of canning jars, as is Ace. All of the tools you need are in your backyard, so to speak.
